Ramadan Recipe: Porota Bhaji

simple and easy this is a traditional breakfast recipe from back home (bangladesh) i remember having it with puris back home (fryed rotis) something very nostalgic about it an defo a comfort food

ingredient:

  • 1 white onion
  • 4 medium sized potatoes
  • 1 teaspoon turmeric powder
  • 3 birds eye chillie
  • salt to taste
  • coriander to garnish

Method:

  1. finely slice onions, in a pan add oil and heat when the oil is hot add onion and salt mix well and cover
  2. while the onion is cooking grate the potatoes and soak in cold water, add some salt this will stop the potatoes from becoming to marshy when they are cooked and keep its shape
  3. when onions are translucent, add turmeric and mix well cover with a lid for a couple of min to cook the turmeric spice
  4.  wash and rinse the potatoes and add to pan mix well with onions
  5. when the potatoes are nearly cooked add chilies
  6. garnish with coriander ad take of heat

this is best served with puris a fried flour roti but i also love it with paratas or rice
